75 day old meat on the BBQ?

I'm currently at the half way mark of the academic program I'm attending and our class has just finished our academic phase. Our next step will be to leave the classroom and venture forth into the world under a mentoring program to learn and consolidate our skills through real world training and experiences.  

Knowing this milestone was fast approaching a few of my classmates made preparations for a BBQ. Throughout the year it had became very obvious we had a creative and daring chef among us! Before we knew it, the class had thrown hundreds of dollars into a hat to buy a lot of meat!

The catch was we weren't going to cook that meat. It was going to age for 75 days!

With the party starting at 1 pm the crowd grew in size over the next two hours and the food started to come, course after course. Three BBQ beer can chickens, guacamole, taco wraps with re-fried beans, salads, and finally our main course of aged meat followed by a variety of desserts. The meat was soft but beefy and well marbled with a beautiful char to the outside. Only sitting on the grill for moments it would be taken off and passed out to each of us that was daring enough at the gathering. 

I joined the many skeptics in the crowd to dig in and it was delicious! We are all crossing our fingers tonight hoping and praying that our chef pulled this off safely for us. I personally like to hold myself to the "go big or go home" way of life and so I had a second cut of meat. I figure I might as well enjoy myself if this could possibly ruin me for the next few days!

I'm going to keep faith and say it was all worth it and nothing tragic will happen. At the time of this writing I am alive and well and completely sated. Just in case anything terrible does happen I have photographed the chef and the meat he served. "Your honor, let the record show this was the delicious meat we were innocently fed. We demand justice be served along with a few more beers!".   

I'll hit the sack for now because it just passed midnight here. Tomorrow after some work around the condo I'm hoping to head off to Black Creek in Ontario for "Soldiers and Spies" which sounds pretty damn cool to me. I'll throw a link to the event down below.
